Oatmeal Banana Cupcakes recipe

Ingredients:

½ cup of butter or margarine, softened.
½ cup of sugar.
2 medium eggs.
1 cup of ripe bananas, mashed.
¾ cup of honey.
1 ½ cup of all-purpose flour.
1 cup of quick-cook oats.
1 teaspoon of baking powder.
1 teaspoon of baking soda.
¾ teaspoon of salt.

Preparation Instructions:

In a mixing bowl, cream the butter and sugar.

Add eggs, bananas and honey, then mix thoroughly.

Combine the dry ingredients, then stir into creamed mixture just until moistened.

Fill paper-lined muffin cups two-thirds full.

Bake at 350°F (175°C) for 20 minutes or until done.

Allow to cool in pan for 10 minutes before removing to a wire rack.
