Banana Oatmeal Cookies recipe
Chopped pecans can be substituted with chopped walnuts if desired.
Ingredients:
3 medium bananas.
2 cups of quick-cook oatmeal.
1 ½ cups of chopped dates.
½ cup of chopped pecans.
1/3 cup of white sugar.
1/3 cup of salad oil.
1 teaspoon of vanilla extract.
¾ teaspoon of salt.
Directions:
Mash the bananas.
In a suitably sized bowl mix the mashed bananas with all the other ingredients.
Drop by rounded tablespoons onto a cookie sheet (yields about 30).
Bake at 375°F (190°C) for about 25 minutes.

This turned out horrible. The cookies burned within the first 10 minutes.
I didn't have dates or pecans, so I used raisins, which worked fine. The recipe says bake for 25 mins, but after 15 mins mine were already getting very toasty on top, so I took them out. A tiny bit underdone in the middle, but better that than burnt!
I made a few adjustments. Increased the recipe by 1/2 but substituted 1 cup of oatmeal for wholemeal flour. Also added a cup of wheatbran mixed with pumpkin seeds/nuts (instead of just nuts). Also used soft brown sugar instead of white. Baked in fan oven, middle shelf at 170C for 17mins (checking regularly). Then left to cool down in bottom of oven. Kids love them. They're soft and chewy, rather than crunchy but tasty all the same
Good and easy for a quick treat.
