Banana-Nut Bread recipe
Ingredients:
2 medium eggs.
2 cups of sifted white wheat flour.
1 ½ cups of mashed ripe bananas.
1 cup of firmly packed brown sugar.
1 cup of chopped nuts.
½ cup of butter.
1 tablespoon of lemon juice.
3 teaspoons of baking powder.
½ teaspoon of salt.
Preparation Instructions:
Preheat your oven to 350°F (175°C).
Butter a suitably sized loaf pan.
Sift the flour, the baking powder and the salt together.
Cream the brown sugar together with the butter; then mix in the 2 eggs.
Mix in the bananas and lemon juice, then add the flour mixture as quickly as possible and mix thoroughly.
Fold in the chopped nuts; then pour into prepared pan.
Bake for about 50 minutes, until a toothpick inserted in the middle of the loaf comes out clean.
